About the Material

A note on weight: the 5L handi with contents can reach 8–10kg when full. Two hands. Short distance from stove to table. The loop handles are sized for a confident two-handed grip — do not attempt to carry this single-handed at full capacity. At 5 litres, the clay body’s scale creates an additional benefit: greater surface area for the slow, even heat distribution that Indian festive cooking requires. Biryani rice at the edges of the pot cooks at the same rate as rice at the centre — no dry perimeter, no mushy centre.

The Science

For a 5-litre dum biryani, the physics are particularly interesting. As the pot seals and heats, steam generated from the gravy layer rises through the 50% pre-cooked rice. The clay walls absorb this steam pressure rather than reflecting it — creating a lower-pressure, gentler steam environment than a sealed metal vessel. The rice grains hydrate in this environment at a lower temperature than full boiling, which is precisely why dum rice has a texture that pressure-cooked or boil-method rice cannot replicate.

Caring for Your Klayvi

1 — First UseRinse with plain water. Cook something water-based (dal, rice water) for first 2–3 uses.
2 — Daily CleanUse Klayvi Wash Care (pH 6–8) or a sisal scrubber with warm water. Never standard dish soap — its pH 9–11 strips the seasoning.
3 — After WashDry completely on low flame for 2 minutes. Never store damp.
4 — MonthlyApply 4–5 drops of cold-pressed flaxseed oil. Heat on medium-low until it just smokes at the edges (~4 min). Cool. Wipe.

Frequently Asked Questions

Q: The 5L takes a long time to heat up. Is that right?
Yes. At 7–8mm wall thickness and 5L volume, this pot needs 10–12 minutes to reach cooking temperature on medium-high gas. Start it earlier than you would a metal pot. Once at temperature, turn the flame down — the clay holds heat efficiently.

Q: Can I use this for dum biryani for 10 people?
Yes. The 5L comfortably holds 700–800g of raw basmati (which expands to fill the pot at 50% pre-cook stage), the meat and gravy layer, and the finishing saffron rice. Leave at least 4cm headspace for steam circulation.

Q: Does the size affect the cooking quality?
No — the same clay, same wall preparation, same seasoning protocol as the smaller sizes. The only difference is thermal lag: bigger pot takes longer to heat, but also holds heat significantly longer. Plan your timing accordingly.

Q: Is the 5L suitable for daily use or only festive occasions?
It’s designed for festive occasions, but some households use it weekly for batch cooking — a 5L dal that lasts the week, or a large soup stock for the family. Completely suitable for daily use with proper care.

Q: What’s the oven-safe temperature?
250°C maximum. Pre-heat the oven with the pot inside (place in cold oven, set temperature). Never put a cold 5L pot into a pre-heated oven — the thermal shock risk at this size is higher than with smaller vessels.

Q: Can I seat this on a gas tandoor ring?
Yes. The wide flat base of the 5L sits stably on tandoor gas ring supports. Use the heat diffuser disc between the ring and the pot base for even heat distribution.
