About the Material

The 3L kadhai is where the clay body’s character becomes most visible. At this size and wall thickness, the mineral colourways — Laterite Red and Monsoon Slate — develop a more complex surface patina over time than standard terracotta. The higher mineral content that creates the distinctive colour also creates different seasoning behaviour: Laterite Red develops a slightly redder patina with oil; Monsoon Slate develops a darker, richer tone. Both are available at the same price. The choice is about what you want to see on your stove.

The Science

For a large-batch cooking context — a full family sabzi that feeds 7 people — the physics of the 3L kadhai’s even heat distribution become practically significant. In a metal wok or kadhai of the same volume, the base-centre hotspot (directly above the burner ring) is 30–40°C hotter than the peripheral edges during active cooking. In clay, that differential is 8–12°C. Vegetables at the edge of a clay kadhai cook at nearly the same rate as vegetables at the centre.

Caring for Your Klayvi

1 — First UseRinse with plain water. Cook something water-based (dal, rice water) for first 2–3 uses.
2 — Daily CleanUse Klayvi Wash Care (pH 6–8) or a sisal scrubber with warm water. Never standard dish soap — its pH 9–11 strips the seasoning.
3 — After WashDry completely on low flame for 2 minutes. Never store damp.
4 — MonthlyApply 4–5 drops of cold-pressed flaxseed oil. Heat on medium-low until it just smokes at the edges (~4 min). Cool. Wipe.

Frequently Asked Questions

Q: How are the Laterite Red and Monsoon Slate colourways made?
Both are natural mineral colourways — not painted or dyed. Laterite Red uses a clay mix with higher natural iron oxide content (the same mineral that makes Indian terracotta red in the first place, but more of it). Monsoon Slate uses a clay mix with higher manganese and silica content. Both are tested to the same ICP-OES standard as our standard terracotta.

Q: Does the colourway affect cooking performance?
No. The cooking surface is the same clay body regardless of colourway. What does differ slightly is the seasoning patina — Laterite Red develops a slightly warmer-toned seasoning; Monsoon Slate develops a darker, more uniform patina. Neither affects food quality or safety.

Q: Is the 3L suitable for deep-frying?
Yes, for large batches. The 3L kadhai comfortably holds enough oil for deep-frying significant quantities of pakoras, samosas, or fish. Fill to maximum 60% oil capacity, heat gradually (do not put the 3L on maximum flame from cold), and use the heat diffuser disc for more even oil temperature.

Q: What’s the maximum flame setting?
Medium-high for heating up; medium for cooking. Unlike metal, clay doesn’t need maximum flame. The clay distributes heat so effectively that high flame often causes the exterior to heat faster than the interior can equalize — leading to thermal stress. Medium-high gives you everything you need.
