Even heat. The simple addition that saves every slow dish.

A 3mm cast iron disc that sits between the gas burner ring and the clay vessel base, distributing the ring-concentrated flame heat evenly across the full base diameter. For slow-cooked dishes — bone broth, long-simmered dal, dum biryani, slow mutton — this eliminates the base-centre scorching that occurs when clay sits directly on a gas burner ring. One piece. One change. A different class of slow cooking.

Key Features & Benefits

  • The Problem It Solves: A gas burner ring concentrates heat at a circle — typically 12–15cm diameter. Clay conducts heat approximately 100× more slowly than aluminium. Without the diffuser, the clay directly above the burner ring gets significantly hotter than the centre and edges. The result: scorched base centre while edges are still catching up. Every slow dish benefits from the diffuser.
  • Cast Iron — The Correct Material: Cast iron conducts heat in all directions simultaneously, reaching the disc edges within 2–3 minutes of the burner being lit. It provides a uniform heat surface across the full disc diameter. Aluminium would work but warps under repeated thermal cycling. Copper is too expensive. Cast iron at 3mm is the optimum.
  • 3mm — The Correct Thickness: Thinner than 3mm: warps. Thicker than 3mm: too much thermal mass, slow heat-up, poor efficiency. At 3mm, the disc reaches equilibrium temperature quickly and maintains it stably under the clay vessel above.
  • Develops a Seasoning of Its Own: After a few uses, cooking oils that drip from the clay vessel above season the cast iron disc. It darkens, becomes more non-reactive, and provides even better heat distribution. The disc improves with use.
  • Universal Fit: The diffuser disc is sized to fit any Klayvi vessel from the 600ml sauce pan to the 5L handi. Place it on any gas burner ring before the clay vessel.
  • Also Slows Heat-Up Slightly: For high-heat cooking where speed matters (stir-frying, high-heat tadka), the diffuser is not necessary — direct gas contact on the clay base is faster. The diffuser is specifically for slow, long-cook applications. About the Product The heat diffuser is uncoated cast iron. No enamel, no PTFE, no surface treatment. It will develop a natural seasoning from the cooking oils that drip from the clay vessel above — similar to the seasoning of a cast iron pan. After 10–15 uses, it darkens to a uniform deep grey-black and provides even better heat distribution than a new disc. The edges of the disc can be sharp on a new piece — handle with a folded cloth for the first few uses. After the edges weather slightly through thermal cycling, the sharpness diminishes. The disc is produced by precision casting at a foundry that supplies industrial cast iron cookware components — it is not a consumer product afterthought but a component designed for repeated high-heat use. The Science The physics of heat diffusion: the gas burner ring is a ring heat source. The clay base is a poor lateral conductor (conductivity 0.8 W/m·K vs. aluminium’s 237 W/m·K). Without diffusion, the heat stays concentrated at the ring contact area. The 3mm cast iron disc (conductivity approximately 52 W/m·K — 65× better than clay, 4.5× worse than aluminium) distributes the ring heat laterally within 2–3 minutes of being lit, presenting the clay vessel with an approximately uniform heat source across its full base diameter rather than a ring of concentrated heat.

Frequently Asked Questions

Q: Do I always need the diffuser, or only for slow cooking?
Only for slow cooking. For quick high-heat cooking (sabzi, stir-fry, tadka), the direct gas contact on the clay base is appropriate and faster. The diffuser adds thermal mass that slows heat-up time — acceptable for a 2-hour slow curry, not ideal for a 5-minute stir-fry.

Q: Can I use the diffuser on induction?
No — the heat diffuser is for gas burners only. For induction, use the induction adapter discs (KL-KT-003). The heat diffuser does not interact with induction electromagnetic fields in the same way as the ferromagnetic adapter discs.

Q: The diffuser disc is warping slightly. What is happening?
Light warping can occur if the disc is subjected to rapid thermal shock — placing a cold disc on a very high flame, or dropping it into cold water while hot. For normal use (placing on the burner ring and heating gradually), 3mm cast iron at this diameter is sufficiently thick to resist warping. If warping occurs, return the disc to room temperature slowly (not in cold water).

Q: How do I season the heat diffuser disc?
The disc seasons automatically from drips of cooking oil from the clay vessel above. To accelerate initial seasoning: after first use, while still warm, apply a thin film of flaxseed or vegetable oil with a cloth. Wipe off excess. The disc will darken from raw grey cast iron to dark seasoned cast iron within 5–10 uses.

Q: Can the diffuser disc be used without a clay vessel (as a standalone cooking tool)?
No. The disc is designed as an interface piece, not a cooking surface. Using it as a standalone griddle or pan is not its function and the edge sharpness makes it unsuitable for food handling.

Q: Is one diffuser disc included in the Starter Kit?
The Starter Kit does not include a diffuser disc as standard. It is included in the Handi 2L, 3L, 5L, Slow Cooker series, and Patila 3L, 5L. For the Starter Kit and Handi 1L, the diffuser is available separately (this product).
