About the Material

Dum pukht — literally “stifled cooking” — requires a specific thermal environment. The clay handi’s thermal diffusivity is approximately 0.4 × 10⁻⁶ m²/s, versus aluminium at 84 × 10⁻⁶ m²/s. That 210× difference means temperature changes at the clay wall take time to reach the interior — creating a stable, low-agitation environment that is genuinely the technical condition for dum cooking. The 2L is the Standard series: 5–6mm walls versus the Lite series’ 4–5mm. Slightly more thermal mass, slightly more robust, and better suited to the longer cooking times that biryani and slow curries require.

The Science

Modern food science explains what Mughal cooks knew empirically. Clay’s thermal stability prevents the temperature spikes that cause protein denaturation and aromatic volatile loss in rapidly heated metal vessels. Volatile aromatic compounds — the terpenes and terpenoids that give basmati its character — are retained longer in a clay vessel’s controlled temperature environment than in a metal pot that heats and fluctuates rapidly. This is documented. It is also verifiable at home: make biryani in a steel pot and a clay handi from the same recipe on the same day. They will not taste the same.

Caring for Your Klayvi

1 — First UseRinse with plain water. Cook something water-based (dal, rice water) for first 2–3 uses.
2 — Daily CleanUse Klayvi Wash Care (pH 6–8) or a sisal scrubber with warm water. Never standard dish soap — its pH 9–11 strips the seasoning.

Frequently Asked Questions

Q: The lid doesn’t seal perfectly. Should I be worried?
The seal improves with use. In the first 2–3 sessions, the clay-on-clay contact is still settling. By session 5, the lid sits noticeably tighter. For biryani, you can use a strip of atta dough as a supplementary seal if you prefer — but it’s not required.

Q: What’s the heat diffuser disc for?
It sits between your gas burner ring and the clay pot base. A gas ring concentrates heat at a circle — clay conducts laterally 100× slower than aluminium, so without the disc, the centre of the base can overheat while the edges lag. The cast iron disc spreads the heat across the full base diameter before it reaches the clay. My biryani rice came out unevenly cooked — some grains hard, some mushy. Three common causes: (1) Rice was not at the correct 50% pre-cook stage before dum. (2) Flame was too high — the clay environment is more sensitive to flame intensity than a steel pot. Medium-low after sealing. (3) Dum time was too short. 45 minutes minimum; 60–75 is ideal for this pot size.

Q: Does the 3-year warranty transfer if I gift the pot?
Yes. The warranty is attached to the batch ID on the product, not to a named purchaser. Keep the warranty card. Whoever has the pot and the batch ID can claim a warranty replacement.

Q: Can I put this in the oven?
Yes, up to 250°C. Pre-heat the oven with the pot inside rather than placing a cold pot into a hot oven — the gradual temperature increase avoids thermal shock.

Q: How do I clean the heat diffuser disc?
Let it cool completely. Wipe with a dry cloth. A light rust film may develop after some uses — this is normal cast iron behaviour and doesn’t affect function. Rub with a drop of oil to prevent it.
